Pizza Rossa


Ingredienti

500 ml passata di pomodoro

500 g farina “Primitiva tipo 2” Molino Pasini

350 ml acqua

10 g sale

4 cucchiai di olio EVO

1 bustina di lievito di birra secco

Origano

Procedimento:

In una ciotola capiente trasferite la farina, il lievito e il sale, aggiungete l’olio e acqua a filo e iniziate ad impastare con un cucchiaio. Trasferite il composto sulla spianatoia e impastate a mano per qualche minuto. Riponete nella ciotola unta e fate raddoppiare di volume (I tempi di lievitazione dipendono da: quantità e tipologia di lievito utilizzato, temperatura ambiente in cui si prepara un lievitato)

Riprendete l’impasto e stendetelo su una teglia unta aiutandovi con i polpastrelli, senza sgonfiarlo troppo.

Condite la passata di pomodoro con olio, sale e origano (o altra erba aromatica) e trasferite sulla pizza stesa.

Cuocete in forno caldo a 250° in modalità statica in questo modo: 10 minuti sulla base del forno, 10 minuti nel ripiano intermedio del forno, ultimi 5 minuti in modalità ventilata.

Estraete e attendete che la pizza sia tiepida.

500 ml tomato sauce

500 g Primitiva flour type 2 Molino Pasini

350 ml water

10 g salt

4 tablespoon EVO oil

1 sachet of brewer's dry yeast

Oregano

Steps:

In a large bowl put the flour, yeast and salt, add oil and water in a slow trickle and start kneading with a spoon.

Transfer the mixture to the pastry board and knead by hand for a few minutes. Place back in greased bowl and allow to double in volume (Rising times depend on: amount and type of yeast used, room temperature in which a leaven is prepared)

Take the dough again and roll it out on a greased baking sheet, helping yourself with your fingertips, without deflating it too much.

Season the tomato sauce with oil, salt and oregano (or other aromatic herb) and transfer to the rolled-out pizza.

Cook in a hot oven at 250°C (482°F) in static mode like this: 10 minutes on the bottom of the oven, 10 minutes in the middle shelf of the oven and last 5 minutes in fan mode.

Take out and wait until the pizza is warm.
